Dinner In the Fast Lane!

Walk into a supermarket these days and you might wonder who cooks anymore. Shoppers crowd the aisles of frozen products and line up at the counters of takeout foods and partly prepared meals. A.C. Nielsen, the market research firm, reports sales of refrigerated, packaged meals have climbed 26 percent in a year. Even the fruit and vegetable section is going packaged; bagged salad sales are up to 20 percent.

Nobody knows how to cook anymore .... They know how to thaw.... Of course, supermarkets still offer traditional ingredients, and larger stores add a cooking professional to give preparation tips. But "quick solutions" like heat-and-eat dinners and pizzas are the runaway best sellers.

What's happened to the home-cooked meal? It a casualty of societal changes, says health professionals, who trace the decline in the traditional family dinner back a generation or two, to when someone left the stove for paying jobs. Canadian statistics show parents in four out of five families work outside the home, many on conflicting shirts. Hurrying to and from work, driving children here and there, we are now believed to eat one in 10 meals in our cars.

Although Canadians recently told researchers less than five dinners a week are home-cooked, skeptics speculate that most of those meals are convenience foods.

The family table is in crisis, home economists say. Parents and children grab food from the freezer and microwave it, or phone out for meals. They often eat alone, and their diets can be heavy in salty, fatty food. Home cooking is an endangered skill, partly because people feel they lack the time, partly through lack of culinary skills.

Home economist Nancy Dixon, who teaches at Cowansville, says she's aware many parents of her students never learned to cook and whole families live on prepared foods.

She has tried teaching basic dishes in class, then assigning students to repeat the lesson at home. Parents seem to appreciate their children's demonstrations. "Parents wrote, thanking her for her tea-biscuit class," she says.

Dietitians specialists on weight issues warn that today's diets are one reason obesity is a problem worldwide. They are particularly concerned about over-weight children. "Kids are left alone a lot and they have the responsibility for deciding what they eat and how much". Parents must take responsibility for the food in the home. We have to nourish our kids.

There is our health to worry about, but cultural observers see family institutions at stake, too.

When you can't cook; you break the chain of family history. Your holidays will never taste like Grandma's. Your house will never smell as homey. And who will linger over a bag of burgers? Eating together ... sharing meals, is the basis of civilization. Dinner together is important. It's your family's health. And it's the time when everyone is in the room. That's where you talk about your day and find out if something is bothering someone.

Working parents experience the temptation to go faster, to go for quick meals. It's amazing the amount of ready made food in the stores. But home cooking is both a responsibility and a pleasure and one should appreciate the culinary skills you acquire over the years. You could prepare simple meals such as salmon, marinated then broiled, with vegetables. Or pasta with a fast sauce made of minced beef and canned tomatoes, plus salad.

I find there are two reasons that family dinners are on the way out in many homes. "I think a lot of people don't know how to cook, and there are a lot of fast-paced people out there".
