The Oxford dictionary defines "picnic" as "an outing or excursion including a packed meal eaten out of doors." But that definition doesn't convey the sheer pleasure of such an outing where a good meal becomes spectacular because of the surroundings.

Plan

Mrs. Beeton, in her famous 1891 publication, Mrs. Beeton's Cookery Book, said: "A more troublesome luncheon to provide is one for a picnic...Now for this kind of meal it is not only essential that we have a menu, we also need a complete list of all articles required, independent of the actual food and drink." She also decreed that no fewer than 35 different dishes were required for a proper picnic.

Although we need not have such an elaborate menu these days, planning is still important.

Non-food Items

Before you make a list of what you need to pack, establish the focus of the gathering. Is it a romantic tête-à-tête? A beach party that will feature swimming and other activities? Are you going hiking and therefore using your backpack as your picnic "basket"? Maybe you're gathering your family or some friends for a relaxing meal and some conversation. The purpose of your outing will determine what your non-food essentials will be.

Start with a tablecloth or ground cover. For a picnic on the grass or sand, try using an old comforter or thick blanket. You might like to spread out a tablecloth over part of the blanket for a space to set out food. You'll find that if you use fabric cloths instead of plastic, your picnics will seem well-appointed.

If you lay out your cloth on a picnic table, have some push pins handy to fasten the corners and edges against sudden breezes.

Of course, you'll need dishes (for eating and for serving), cutlery and glasses or mugs. Paper plates are cheap and easy and if they are too flimsy, can be supported by wicker plate holders. The range of plastic tableware, including acrylic drinking glasses, available today is dazzling. If you'd like a fancier tone to your setting, pack ironstone dinnerware or even china. Wrap breakable pieces well in tea towels or paper towels. Take along a newspaper for wrapping them up to bring home, because those original wrappings are bound to have been used by day's end.

You'll also need lids or net covers for all of the food containers. Other essentials include napkins, hand wipes, sunscreen, bug repellent and a garbage bag to clean up before you leave the picnic site.
